Spiced Sweet Potato & Pear Soup

Here’s a perfect, Autumn comfort soup without any unhealthy ingredients- this Sweet Potato & Pear Soup does the trick with sweet potatoes, fresh seasonal pears, and some unique spices and fats from sesame tahini. And, it’s super easy to make, requiring only one pot and a Vitamix or high-speed blender. Enjoy this on your next chilly autumn evening, with some toasted rustic bread.

2 quarts vegetable broth 1 pounds yams or sweet potatoes, cut up 2 medium carrots, cut into pieces 2 stalks celery, cut into pieces ½ yellow onion, chopped 1 medium shallot, chopped 2 fresh pears, cored and cut into pieces 1 tsp. Chinese five spice 1 can full fat coconut milk ¼ cup raw sesame tahini 1/3 cup fresh mint, chopped 1 tsp. dried turmeric powder (optional for color) Salt & pepper to taste Extra chopped mint and pear for garnish

Heat the vegetable broth in a medium soup pot. Add the sweet potatoes, carrots, celery, onion, and shallots. Bring to a boil, then reduce to a rolling simmer and cook for about 30 minutes.

Add the pears, Chinese 5 spice, coconut milk, tahini, mint, and turmeric.  Stir ingredients together until tahini starts to beak apart.

Transfer to a high-speed blender and blend until smooth. This may need to be done in batches. Use caution when blending hot liquid in a blender. It is best not to fill the blender pitcher all the way, and start at a very low setting, increasing the speed gradually in order to avoid combustion of the hot liquid.

Return blended soup to the soup pot. Season for taste with sea salt and pepper. Serve with a garnish of chopped mint and diced pear.
